Bubbles (german pancakes)

1. Blend:
  • 6 eggs
  • 1 c. flour
  • 1/4 c. butter, melted
  • 1 c. milk
  • 1 tsp vanilla
2. Pour into greased 9x13 pan.
3. Bake on 350 for 15-20 min or until browned and bubbling.

Caramel Biscuit Ring Around

I'm pretty sure Courtney got this from her 6th grade friend Stephanie at a sleepover.  It receives automatic coolness points because it comes from the big sis.  Super easy, super cheap, super healthy..........eh ok maybe not that last one, but still super good!

The recipe:

  • 3/4 c. brown sugar
  • 1/3 c. butter
  • 2 T water
  • 2 cans biscuits
  1. Preheat oven to 400 degrees.
  2. Grease a bundt pan.
  3. Melt butter.  Add brown sugar and water.
  4. Using kitchen shears, cut biscuits into quarters.
  5. Mix butter/sugar mixture into biscuits. Toss lightly.
  6. Spoon into pan and bake for 15 minutes or until golden brown and cooked throughout

Maple Syrup

Hot? Cold? This is the great debate between my parents.  In my dad's childhood they ate it cold.  He says the pancakes warm it up to the perfect temperature.  My mom grew up serving it hot.  Tomato Tomato (hmmm how do you type that so you say it right?  Eh anyway...)

The Recipe

  • 1/2 c. brown sugar
  • 4 c. white sugar
  • 2 c. water
  • 1 t. vanilla
  • 1 t. maple flavoring
  1. Bring sugar and water to a boil.
  2. Boil for 1 minute.
  3. Add flavorings.
  4. Serve hot?  Or cool in the fridge.  Whatever floats your boat. 
Makes 1 qt.

Kayla's German Apple Pancake with Homemade Creamy Syrup

It seems like most the recipes I post come from my Mom's side of the family.  So, when my cousin Kayla posted this on her blog  I had to snag it to post here.  My family loves making German pancakes too- we call them bubbles.  Oh, to get the connection right, Kayla is married to my cousin Brian, whose Dad is my Uncle JC.  He's my Dad's oldest brother and the one who reminds us all of Grandpa Cook.

 German Apple Pancake Recipe
I found the basis for the recipe on allrecipes.com and tweaked it just a bit. It is good as a spiced apple pancake or great without the nutmeg and less cinnamon. Adjust the spice to your liking (you can add cloves for example or omit the spices all together). We usually have breakfast for dinner every Tuesday and I love to find fun recipes to try. This is definitely a favorite breakfast recipe of ours.

3 T. butter
2 apples, peeled and cored
1/4 c. brown sugar
1/2 t. cinnamon
1/2 t. nutmeg

6 eggs
1 1/2 c. milk
1 t. vanilla
1 c. flour
3 T. sugar
1/2 t. salt

Melt butter in 9x13 pan in preheated oven of 400 degrees. After butter is melted, add the sliced apples and cook for about 10 minutes. Meanwhile, blend together eggs, milk, and vanilla. Gradually add flour, sugar, and salt. Mix until just blended.

Take cooked apples out of oven and sprinkle brown sugar, cinnamon, and nutmeg over the top of them. Pour batter over the apples and return to the oven for 25-30 minutes or until edges of pancake are golden brown. Serve warm with homemade syrup or whatever you like on pancakes. Homemade Creamy Syrup
This is a great basic recipe for homemade syrup. Use buttermilk for a nice rich taste. I used coconut cream the last time I made this syrup and it was to die for! The syrup turns out thick and creamy, especially after it has cooled. The assembly is really easy so don't let the instructions fool you!

1 1/2 c. white sugar
3/4 c. **creamy liquid
1/2 c. butter
2 T. corn syrup
1 t. baking soda
2 t. vanilla
**creamy liquid = buttermilk, half and half, heavy cream, milk, coconut cream, etc.

In a saucepan, stir together the sugar, **creamy liquid, butter, corn syrup, and baking soda. Bring to a boil, and cook for 7 minutes. Remove from the heat, and stir in the vanilla. Serve warm and refrigerate leftovers.

6-Week Bran Muffins

There are two scents that take my mind straight to my Grandma Allen's house: chicken noodle soup, and warm bran muffins. I probably asked Grandma to make muffins for breakfast just about every time I visited there as a child. Even today, there's something comforting about that smell.

The recipe:
-Mix 2 cups boiling water with 5 tsp. baking soda. Let cool.
-Cream 1 cup shortening, 2 cups (or less) sugar, and 4 eggs, beaten until fluffy.
-Add water to shortening mix, and add:
-2 cups All Bran Cereal
-4 cups bran flakes cereal
-1 qt. buttermilk
-5 cups flour with 1 Tbsp salt

-Mix all into a 10qt container. Bake for 20 minutes at 375 degrees.

Best part of the recipe? It's good for 6 weeks!! (Just keep the batter in an airtight container in the fridge)
